Peach Baked Pancake: Breakfast-Brunch

Prep time:10 min.

Ingredients:

  • 2 cups fresh or frozen sliced peeled peaches

  • 4 teaspoons sugar

  • 1 teaspoon lemon juice

  • 3 eggs

  • 1/2 cup all-purpose flour

  • 1/2 cup milk

  • 1/2 teaspoon salt

  • 2 tablespoons butter

  • ground nutmeg

  • optional sour cream

Step 1:

combine peaches with sugar and lemon juice. set aside. Beat eggs until fluffy. Add flour, milk and salt. beat until smooth.

Step 2:

Place butter in a 10 inch skillet. bake at 400 for 4-5 min. or until melted. Immediately pour batter into hot skillet. Return to oven and bake for 20-25 minutes or until the pancake has risen and is puffed all over.

Step 3:

Fill with peach slices and sprinkle with nutmeg. Serve immediately with sour cream if desired. I sometimes used frozen mixed fruit or add blue berries for variation and added color.
