Garden Fresh Vegetable Fritatta

Ingredientes

  • 1 dozen Eggs
  • 1 pint Cottage Cheese
  • 8 oz Shredded Mozzarella
  • 1 small finely diced Onion
  • 2 cloves minced Garlic
  • 1 1/2 finely sliced Carrots
  • 1/2 Red or Yellow Pepper, cut into thin strips
  • 1 cup finely sliced Asparagus
  • 1 tablespoon Dried Basil
  • 1 tablespoon Dried Dill
  • Olive Oil
  • Butter

  1. Beat the eggs and add the cheese. Stir in well.
  2. Saute the onions, carrots and garlic in olive oil until slightly softened.
  3. Add the peppers and asparagus. Saute mixture until soft. Add to the egg and cheese mixture.
  4. In a separate pan, saute the mushrooms in butter until lightly softened. Add to the egg mixture.
  5. Bake in a 9x13 pan at 325 for about 45 minutes, or until a toothpick inserted in the center comes out clean. Feel free to substitute other cheeses and different vegetables to the mix. Some favorites are zucchini, spinach, kale, and even broccoli. The key is to slice everything fine, so that no particular taste is overwhelming. The frittata is best served with a fresh garden salsa.
