Blueberry Gingerbread

Ingredientes

  • 1 cup granulated sugar
  • 1/2 teaspoons cinnamon
  • 1/2 teaspoon ground cloves
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon ground nutmeg
  • 1 teaspoon salt
  • 1 1/4 teaspoons baking soda
  • 2 1/2 cups flour
  • 1/2 cup molasses
  • 2 eggs
  • 1/2 cup vegetable oil
  • 1 cup Hot brewed tea (I use herb tea)
  • 1 cup blueberries (fresh or frozen)

  1. In a medium mixing bowl, whisk together the dry ingredients, up through the flour.
  2. Add the molasses, eggs, and oil and mix well. Stir in the hot tea. Fold in the blueberries.
  3. Pour the batter into a greased 9x13 pan. Bake in a preheated 350 oven for 25 - 30 minutes, or until a toothpick comes out clean. The top should look shiny, and sides retreat from the edges of the pan.
  4. Let cool in pan, and cut into pieces.
