Blueberry Gingerbread: Breakfast-Brunch

Ingredients:

  • 1 cup granulated sugar

  • 1/2 teaspoons cinnamon

  • 1/2 teaspoon ground cloves

  • 1/2 teaspoon ground ginger

  • 1/4 teaspoon ground nutmeg

  • 1 teaspoon salt

  • 1 1/4 teaspoons baking soda

  • 2 1/2 cups flour

  • 1/2 cup molasses

  • 2 eggs

  • 1/2 cup vegetable oil

  • 1 cup Hot brewed tea (I use herb tea)

  • 1 cup blueberries (fresh or frozen)

Step 1:

In a medium mixing bowl, whisk together the dry ingredients, up through the flour.

Step 2:

Add the molasses, eggs, and oil and mix well. Stir in the hot tea. Fold in the blueberries.

Step 3:

Pour the batter into a greased 9x13 pan. Bake in a preheated 350 oven for 25 - 30 minutes, or until a toothpick comes out clean. The top should look shiny, and sides retreat from the edges of the pan.

Step 4:

Let cool in pan, and cut into pieces.
