Hermann Hill's Scrambled Egg Casserole: Breakfast-Brunch

Ingredients:

  • 1/2 lb bacon, diced

  • 3/4 lb ham, diced

  • 8 oz sliced mushrooms

  • 1 2/3 cups flour

  • 9 cups milk

  • 1/2 teaspoon Worchestershire sauce

  • 40 eggs, depending on size

  • 1/3 cup butter

  • 1 cup cheddar cheese, grated

Step 1:

Fry bacon until crisp. Drain grease. Add ham and mushrooms.

Step 2:

Mix flour and 8 cups milk together. Add to ham/bacom/mushrooms in frying pan. Cook until thick, stirring constantly. Season to taste with Worchestershire sauce, salt, and pepper. Set aside.

Step 3:

Beat eggs with 1 cup milk. Melt butter in pan, then scramble eggs. DO NOT COOK DRY.

Step 4:

In 16 ramekins, layer sauce, then eggs, then sauce. Sprinkle with grated cheese. Cover and refrigerate overnight.

Step 5:

Bake at 290 degrees for one hour.
