4 oz White cheddar cheese, cut into 1/2 -inch cubes
4 oz Gorgonzola or Bleu cheese
4 oz cream cheese, softened & cut into 1-inch pieces
1/4 cup butter (a 1/2 stick) cut into 1/2-inch pieces
2 teaspoons Milk
1 teaspoons Worcestershire sauce
Finely chop walnuts and set aside. Finely chop shallot in processor (about 5 seconds), scraping sides of bowl. Add cheddar cheese. Pulse 4-5 times, about 2 seconds each, until crumbly. Add remaining ingredients, including walnuts. Process until creamy, about 30-40 seconds, scraping bowl halfway through. Serve with Carr's crackers or baguette. Yield: 2 1/4 C.
