Morning Glory Muffins: Bread

Ingredients:

  • 2 1/2 cups Sugar

  • 4 cups Flour

  • 4 teaspoons Cinnamon

  • 4 teaspoons Baking Powder

  • 1 teaspoon Salt

  • 1 cup Shredded Coconut

  • 1 cup Raisins

  • 4 cups Shredded Carrots

  • 2 Apples

  • 1 cup Pecans (chopped)

  • 6 Eggs (lightly beaten)

  • 2 cups Vegetable Oil

  • 1 teaspoon Vanilla Extract

Step 1:

Sift Dry ingrediance (sugar, flour, cinnamon, baking soda, salt) together into large bowl.

Step 2:

Mix together (coconut, raisins, carrots, apples, pecans) and then stir in dry ingrediance.

Step 3:

Stir: eggs, oil and vanilla together and mix into all other ingrediants, do not beat it, but mix lightly. Refrigerate until needed. Muffin mix can be held in refrigerator for 2-3 weeks. Bake at 375' for 20 in muffin tin. DO NOT OVERBAKE
