4 oz Bitterseet chocolate (Chopped)
1 cup Sliced almonds
1 cup Dried cherries or craisins
1 1/2 cups Semisweet chocolate chips
1 cup Rolled oats
2 cups All-purpose flour
1 teaspoon Baking powder
1 teaspoon Baking soda
1/2 teaspoon Salt
2 sticks Unsalted butter, softened
1 cup White sugar
1 cup packed Brown sugar
1 1/2 teaspoons Vanilla extract
Pre-heat oven to 350F.
Combine cherries, chocolate chips, chopped chocolate, almonds, and oats.
Sift together the dry ingredients; flour, baking powder, baking soda, and salt.
Beat butter and sugars until light and fluffy. Add eggs and vanilla, beating well. Add dry ingredients beating only until combined. Add the cherries, chocolate chips, chopped chocolate, almonds, and oats.
Using a tablespoon size scoop, drop cookie dough onto a greased cookie sheet, leaving 2 inches between cookies.
Bake 12 minutes, or until cookies are light brown. Cool on sheets for 5 minutes, then transfer to racks and allow to cool completely.
