3/4 cup Flour
1/8 teaspoon Salt
1 cup Whole Milk
Beat eggs lightly in the blender. Then sift in the flour and salt and add the milk. Run the blender on "low" for five minutes. This aerates the batter nicely.
Get your pan (we use an omelette pan) nice and hot and put a little butter in the bottom. This adds a nice flavor and color to the crepes. We put 1/3 cup of batter in the pan. When you can shake the pan and the crepe is breaks loose as a single piece, it's done. Flip it over until the other side is done and it's time to add whatever filling you want.
