Chile Cheese Soufle: Breakfast-Brunch

Ingredients:

  • 15 Eggs

  • 3/4 cup Flour

  • 1 1/2 teaspoon Baking Powder

  • 1 can Diced Green Chile with juice

  • 24 Ounces Cottage Cheese

  • 6 cups Shredded jack & cheddar cheeses

Step 1:

Mix #1 Combine cottage cheese, jack & cheddar cheese, and chiles.

Step 2:

Mix #2 Beat eggs lightly Add flour and baking powder, and blend until little balls of flour are left-they will cook in.

Step 3:

Add Mix 1 to Mix 2 and combine.

Step 4:

Pour into greased 2-3 inch tall glass baking dish.

Step 5:

Bake 15 minutes at 400 degrees then at 350 degrees for 35 -40 minutes. Shake to check center for doneness. Moist is very good! Still a little shakey. Should not be too brown.
