Apple Muffins: Breakfast-Brunch

Ingredients:

  • 3 cups Finely chopped apples

  • 3 1/2 cups Flour

  • 2 cups Sugar (half brown, half white)

  • 1 teaspoon Salt

  • 2 teaspoons soda

  • 1 tablespoon Cinnamon

  • 1 cup Vegetable Oil

  • 2 cups Chopped Walnuts

  • 3 Eggs

  • 2 teaspoons Vanilla

Step 1:

Preheat oven to 350 degrees. Grease muffin tins. Thoroughly combine apples and sugar, then add the rest of the dry ingredients. Mix well.

Step 2:

Add oil, egg, nuts and vanilla. Then mix in flour. The batter will be very thick and gooey. Fill muffin tins 2/3 full. Bake for 30 minutes. Can be frozen.
