Banana Waffles: Breakfast-Brunch

Ingredients:

  • 2 cups All-Purpose Flour

  • 2 teaspoons Baking Powder

  • 1/2 teaspoon Baking Soda

  • 1 teaspoon Salt

  • 2 tablespoons Sugar

  • 2 Eggs

  • 2 cups Buttermilk

  • 3/4 teaspoon Vanilla Extract

  • 1 stick (1/4 pd) Unsalted Butter, melted

  • 4 Bananas

Step 1:

Preheat waffle iron. Sift together all dry ingredients in large bowl.

Step 2:

In another bowl, whisk together eggs, buttermilk and vanilla. Whisk in melted butter into buttermilk mixture, reserving 1 12/2 T. for later use.

Step 3:

Pour buttermilk mixture over the flour mixture and stir just until the dry ingredients are moistened,leaving it lumpy.

Step 4:

Brush both sides of waffle iron with reserve butter. Ladle a thin layer of batter over bottom of waffle iron. Arrange a layer of banana slices about 1/2 inch apart on top and then ladle another thin layer of batter over the slices, creating a banana sandwich. Cook until crisp and golden.

Step 5:

Serve hot with mapple syrup.
