Banana Split Breakfat: Breakfast-Brunch

Ingredients:

  • 1 quart fresh strawberries

  • 1/4 cup sugar

  • 2 bananas

  • 1 cup flour

  • 2 tablespoons sugar

  • 1/4 cup pineapple preserves

  • 2 teaspoon baking powder

  • 1/2 teaspoons salt

  • 1/4 teaspoons baking soda

  • 1 1/2 cup milk

  • 2 tablespoons margarine

  • 1 egg

  • 1 cup corn oil

  • reddi whip

  • 1 cup chocolate syrup

Step 1:

Prepare strawberries, wash, slice and add 1/2 c sugar. Set aside.

Step 2:

Cut one banana into 1/4-inch slices., mash 2nd banana. In mixing bowl combine flour, 2 T sugar, baking powder, salt and baking soda. With mashed bananas, add egg, melted butter, milk and pineappple preserves. Mix into flour mixture, just until well blended. Heat griddle with corn oil, cook as any pancake. Add more corn oil as necessary.

Step 3:

To serve, place two pancakes onto plate, put strawberries on top, then spray with reddi whip. Finish off with chocolate syrup stripes. This is a very filling breakfast, very pretty presentation and does taste a lot like a banana split.
