Blueberry Stuffed French Toast: Breakfast-Brunch

Prep time:20 minutes

Ingredients:

  • 10 slices bakery-type bread, cubed

  • 2 8 oz. packages of cream cheese, cubed

  • 1 1/2 cups blueberries, fresh or frozen

  • 1/2 cup Maple Syrup

  • 10 eggs, beaten

  • 2 cups milk

  • 1 teaspoon Vanilla

Step 1:

Use 9 x 13 dish. Layer 1/2 of the bread, then all of the cheese, then all of the blueberries, then 1/2 of the bread. Mix all the other ingredients and pour over layered dish. cover w/plastic film and refrigerate overnight. Bake covered 45 minutes at 350 degrees, then uncovered for 30 minutes more. Let set 15 minutes before serving

Step 2:

For the Topping: 1 cup sugar mixed with 2 tablespoons cornstarch and 1 cup water. bring to boil. Add 1-1/2 cups of blueberries and simmer 5 minutes and serve on side.
