Apple Breakfast Puffs: Main Dish

Ingredients:

  • 4 eggs

  • 1 cup flour

  • 1/8 dash Nutmeg

  • 1 cup skim milk

  • 4 apples, peeled and chopped

  • to taste pinch Cinnamon and sugar

  • sprinkle powdered sugar

  • 4 tablespoon butter

  • 3/4 cup Maple or Apple Syrup

  • 3/4 cup Maple or Apple Syrup

Step 1:

Beat eggs, add flour, nutmeg, and milk. Mix until blended (batter will still be a little lumpy.)

Step 2:

In separate bowl combine apples, cinnamon and sugar to taste.

Step 3:

Preheat oven to 400 degrees. Put one tablespoon of butter in each of the 6 au gratin dishes and place in the hot oven. Allow butter to melt and dishes to get very hot (5 to 10 minutes).

Step 4:

Remove from oven and pour 1/2 cup batter into each of the dishes. Top with fruit mixture. Bake 15-20 minutes, until golden and puffy.

Step 5:

Dust with powdered sugar. Serve immediately with maple or apple syrup.
