Ricotta Square Coffeecake: Breakfast-Brunch

Ingredients:

  • 1 Butter Cake Mix

  • 3 Eggs

  • 3/4 cup Sugar

  • 2 teaspoons Vanilla

  • 15 oz Ricotta Cheese

Step 1:

Mix cake mix according to the directon on the box and pour into a 9x13 inch glass pan. (Do not grease)

Step 2:

Beat eggs, add sugar, vanilla and the ricotta cheese. This will be of a watery consistency.

Step 3:

Pour the cheese mixture on top of the unbaked cake and spread evenly to cover the cake. During baking the cheese mixture will sink to the bottom.

Step 4:

Bake 45 - 50 minutes at 350 degrees.

Step 5:

Sprinkle with powdered sugar when cooled. Keep cake refrigerated in the glass pan. Cake also freezes well.
