Pumpkin Apple Streusel Muffins: Breakfast-Brunch

Ingredients:

  • 2 1/2 cups flour

  • 2 cups sugar

  • 1 tablespoon pumpkin pie spice

  • 1 teaspoon baking soda

  • 1/2 teaspoon salt

  • 2 eggs

  • 1 cup canned pumpkin

  • 1/2 cup cooking oil

  • 2 cups chopped McIntosh apples

  • 4 teaspoons butter

  • 2 tablespoons flour

  • 1/4 cup Sugar

Step 1:

Combine dry ingredients, except 1/4 cup sugar, 2 tablespoons flour and butter.

Step 2:

Combine wet ingredients.

Step 3:

Combine wet and dry ingredients, just until moistened.

Step 4:

Scoop batter into 18 greased muffin cups.

Step 5:

Make streusel topping: cut together 4 tsp. butter, 1/4 cup sugar and 2 tablespoons flour until crumbly. Sprinkle topping over tops of muffins.
