2 cups white flour
1/2 cup sugar
1 teaspoon baking powder
1 teaspoon baking soda
3 large eggs
1 3/4 cups buttermilk
1/4 cup melted butter
1/2 cup sour cream
Combine dry ingredients with a whisk. Whisk wet ingredients together. Just before you are ready to cook, combine dry & wet ingredients. Do not over mix. The batter will be slightly lumpy. Cook on gridle, flipping them when edges appear dry. Enjoy!
To create Banana Nut pancakes: Reduce milk to ½ cup. Add ¾ cup mashed banana and ¼ cup nuts to ingredients. ½ tsp cinnamon and ¼ tsp nutmeg may also be added for extra flavor.
To create Pumpkin Pancakes: Reduce milk to ½ cup. Add ¾ cup mashed pumpkin, ½ tsp cinnamon and ¼ tsp nutmeg may also be added for extra flavor.
To create lemon & poppy pancakes: add 1 teaspoon lemon extract and 1 teaspoon poppy seeds

Reduce sugar to ¼ cup; add ¼ cup molasses, ½ tsp ginger, ½ tsp cinnamon, ¼ tsp cloves
Topping: ¼ cup butter, ½ cup cream cheese and ½ cup
Maple syrup. Mix well at room temperature.
