Greek Quiche: Breakfast-Brunch

Prep time:15 minutes

Ingredients:

  • 3 Eggs

  • 1 1/2 cups Half and Half

  • 1/4 Onion

  • 1 teaspoon Chopped Garlic

  • 1 pint Cherry Tomatoes

  • 6 oz Fresh baby leaf spinach

  • 1/4 lb Feta Cheese Crumbled

  • 1 9 inch pie shell

  • 1 pinch Salt

  • 1 pinch Pepper

  • 1 pinch Dried Oregano

  • 2 oz Cream Cheese

Step 1:

In mixing bowl whisk eggs, half and half, onions, garlic, salt, pepper, oregano

Step 2:

Layer the pie shell with spinach at bottom, then tomatoes, then crumbled feta.

Step 3:

Pour mixture into pie shell (Make your own or if you are pressed for time I like the frozen Oronoque Orchards brand)

Step 4:

Secret Ingredient - 2 oz. of cream cheese - break into small pieces and distribute evenly around the quiche...so smooth!

Step 5:

Line baking sheet with tin foil Bake for 45 minutes at 350 or until browned.
