Sweet Pea Crostini: Appetizer-Snack

Prep time:45 minutes

Ingredients:

  • 2 cups chicken broth

  • 1 teaspoon red pepper flakes

  • 1 bag frozen peas

  • 1/4 cup fresh chopped mint

  • 3/4 teaspoon salt

  • 1/2 teaspoon freshly ground black pepper

  • 1/2 cup whipping cream

  • 3 oz finely diced prosciutto

  • 1 baguette sliced into 1/2inch thick slices

  • Extra virgin olive oil for drizzling

  • 3 cloves of garlic

Step 1:

For the sweet peas: Warm the chicken broth and red pepper flakes in a saucepan over medium high heat until it boils. Add the frozen peas and cook until peas are tender. Drain the peas.

Step 2:

Place peas in food processor with the mint, salt and pepper. Puree. Place in bowl and cool for 30 minutes.

Step 3:

For the Crostini; bake in 375 degree over for 10 minuted until golden around the edges. Drizzle with olive oil and rub with garlic clove.


Step 4:

To finish, whip the cream until stiff. Fold in pea puree. Top each crostini with pea puree and finish with diced prosciutto.Enjoy!
