Pumpkin Squares: Breakfast-Brunch

Ingredients:

  • 4 eggs

  • 1 2/3 cups sugar

  • 1 cup cooking oil

  • 1 can 15 oz pumpkin

  • 2 cups sifted flour

  • 1 teaspoon baking soda

  • 1 teaspoon baking powder

  • pinch salt

  • 2 teaspoon cinnamon

  • 3/4 teaspoon nutmeg

  • Cream Cheese Frosting

  • 3 oz cream cheese

  • 1/2 cup butter or margarine

  • 1 teaspoon vanilla

  • 2 cups confectioner's sugar-sifted

Step 1:

In mixing bowl, beat together eggs, sugar, oil, and pumpkin until light and fluffy. Stir together flour baking soda, baking powder, salt, cinnamon, and nutmeg and add to pumpkin mixture. Mix well. Spread into greased baking pan 15 x 10 x 1. Bake in pre heated oven at 350 degrees for 25 to 30 minutes or until mixture tests done.Allow to cool. in pan.

Step 2:

Cream Cheese Frosting Mix cream cheese, butter, vanilla, and sifted confectioner's sugar and spread on cooled squares
