Puffy Cranberry Apple Pancake: Breakfast-Brunch

Prep time:1 hr.

Ingredients:

  • 1 cup Milk

  • 4 Large Eggs

  • 1 teaspoon Vanilla

  • 2 tablespoons Butter or Margarine

  • 1/2 cup Flour

  • 1/2 teaspoon Baking Powder

  • Dash Salt

  • 1 tablespoon Sugar

  • 1/8 teaspoon Fresh ground Nutmeg

  • 1/2 cup Sugar

  • 1/2 teaspoon Cinnamon

  • 1/8 teaspoon Fresh ground Nutmeg

  • 3 tablespoons Unsalted Butter

  • 1/2 cup Fresh or frozen Cranberries

  • 1 Apple (Granny Smith is great)

Step 1:

Preheat oven to 425 degrees. Mix first 4 ingredients and then add next 5 ingredients and mix well. Let stand for about 10 or 15 min.

Step 2:

In a seperate bowl mix 1/2 cup of sugar, 1/2 teaspoon cinnamon and 1/8 teaspoon of nutmeg. Put off to the side. Peal and slice apple.

Step 3:

In oven proof skillet melt 3 tablespoons of unsalted butter sprinkle 1/2 of sugar mixture over butter. spread evenly sliced apples and cranberries cook for 5-10 min.

Step 4:

Add batter to skillet and place in oven for 15 min. then reduce heat to 375 degrees and cook for 10 min.

Step 5:

Pancake is done when it gets really puffy. Serve with a scoop of ice cream. Yummy. Enjoy!
