Puffy Cranberry Apple Pancake

Ingredientes

  • 1 cup Milk
  • 4 Large Eggs
  • 1 teaspoon Vanilla
  • 2 tablespoons Butter or Margarine
  • 1/2 cup Flour
  • 1/2 teaspoon Baking Powder
  • Dash Salt
  • 1 tablespoon Sugar
  • 1/8 teaspoon Fresh ground Nutmeg
  • 1/2 cup Sugar
  • 1/2 teaspoon Cinnamon
  • 1/8 teaspoon Fresh ground Nutmeg
  • 3 tablespoons Unsalted Butter
  • 1/2 cup Fresh or frozen Cranberries
  • 1 Apple (Granny Smith is great)

  1. Preheat oven to 425 degrees. Mix first 4 ingredients and then add next 5 ingredients and mix well. Let stand for about 10 or 15 min.
  2. In a seperate bowl mix 1/2 cup of sugar, 1/2 teaspoon cinnamon and 1/8 teaspoon of nutmeg. Put off to the side. Peal and slice apple.
  3. In oven proof skillet melt 3 tablespoons of unsalted butter sprinkle 1/2 of sugar mixture over butter. spread evenly sliced apples and cranberries cook for 5-10 min.
  4. Add batter to skillet and place in oven for 15 min. then reduce heat to 375 degrees and cook for 10 min.
  5. Pancake is done when it gets really puffy. Serve with a scoop of ice cream. Yummy. Enjoy!
