Italian biscotti: Dessert

Ingredients:

  • 2 beaten eggs

  • 1/2 tablespoon vegetable oil

  • 1 teaspoon baking powder

  • 1/2 teaspoon vanilla or almond extract

  • 1 chopped almonds or walnuts

  • 1 grated orange peel

  • 2 cups flour

  • 1 cup sugar

Step 1:

Mix all ingredients in large bowl. Mix well, kneading dough so it is compact (no holes). Form batter into two long rolls, about 2-4” in diameter.

Step 2:

Bake rolls at 350 degrees on ungreased cookie sheet (insulated type works best) for 20 minutes. Take out. Let cool slightly

Step 3:

. Remove rolls carefully to cutting surface and slice diagonally ½”” thick. Lay pieces cut side down on cookie sheets and bake for additional 15 minutes (lightly browned.)

Step 4:

OPTIONAL: Dip one end of cooled cookies in melted chocolate. Yum!
