    Signature Dish

    Mökki Pannukakku
(Finnish for Cottage Pancake) This recipe is a combination of two of our favorites, the classic Sunset Magazine “Dutch Baby” oven pancake and another from one of our favorite cookbooks. Using a blender to mix the batter and a mandolin to cut your fruit makes this recipe a snap. 5 eggs 1-2 tablespoons sugar, depending on how sweet you want it 2 cups milk 1 cup flour 1 cup cottage cheese 1 teaspoon baking powder 1/4 cup Butter Options: ½ lb cooked breakfast sausage link or loose, drained Apples or Pears - lightly sautéed Fresh Berries or fruit Cinnamon, Nutmeg, Cloves, & Allspice Diced Ham - lightly sautéed. Sautéed Veggies & Onions. Toppings: Brown sugar, powdered sugar, real maple syrup. Preheat standard oven to 425F, convection oven to 375F. Mix 1st 6 ingredients in a blender. Don’t over mix or your batter will be tough. About 20-30 seconds maximum. Preparation: Melt butter in 12” cast iron skillet. Add optional ingredients and warm them up. You can sauté apples or pears directly in the pan. Pour in batter and sprinkle with brown sugar if desired. Bake 25-35 minutes until golden brown. Serve with your favorite syrup, jam or powdered sugar and lemon juice Great Combos: Sausage & Apple, Seasoned with a little cinnamon, nutmeg & cloves. Apple or Pear. Seasoned with classic apple pie spices. Ham, Asparagus & Brie. Season with your favorite savory cheater spice Spinach, onion, cheese. Top with some parmesan cheese. Fresh or frozen berries.
