    Alaskan Salmon & Spinach Fritta
    This one always gets rave reviews! It uses fresh wild Alaskan salmon whenever we catch it. For those not fortunate enough to have access to fresh wild Alaskan salmon, other salmon will do - but it won't be nearly as tasty! Feeds 10-12. Prepare the night before and cook in the morning. Ingredients 1 lb poached salmon 5-6 slices multigrain bread with crusts removed 1 c each of shredded cheses colby, jack & cheddar 1 c sauteed onions (optional) 1 package frozen spinach (16 oz) thawed 1/4 c. heavy cream 14 large eggs Salt & pepper to taste Preparation: 1) Saute onions in butter until translucent. Remove from pan and set aside. 2) Poach salmon by placing in a covered microwave safe dish & cook 4-5 minutes until just barely done (don't dry out!). 3) Remove excess water from uncooked spinach by pressing it firmly between paper towels until only slightly damp to the touch. 4) Line bottom of large baking dish with bread. 5) Whisk eggs, cream, salt & pepper until frothy (like scramble eggs) 5) Sprinkle a light covering of mixed cheese over the bread 6) Crumble salmon evenly all over the cheese. 7) Sprinkle another layer of cheeses. 8) Spread the onions evenly over the cheese. 9) Another layer of cheese. 10) Evenly spread the spinach over the cheese. 11) Another cheese layer 12) Carefully pour egg mixture around the pan as evenly as possible 13) Final cheese layer. Put in refrigerator overnight. Cook at 350 degrees for 60-70 minutes until firm. Let stand for 15 minutes. Garnish with sides of sour cream, chives and roasted tomatoes. Yummy!

    We love Pearson’s Pond! My wife and I got married in Juneau in June 2011. Pearson’s Pond provided our accommodations for over a week, planned our wedding, hosted our reception, and arranged a week’s worth of Juneau excursions for us and our two families. Maryann, Rachael and Rick did an amazing job and were so much fun to work with and spend time with. I can’t praise them enough for the excellent job they did, as well as their professionalism. Every single detail was planned and executed to perfection, from our wedding on the glacier, to the reception at their location, to the excursions throughout SE Alaska, to the immaculate accommodations at their Bed & Breakfast. They are truly worth their AAA Four Diamond luxury rating, with every aspect of the accommodations being top notch. They had delicious breakfast, multiple hot tubs, serene location, and the most comfortable bed I have ever slept on! My wife and I are experienced travelers, both domestic and International, and Pearson’s Pond is by far the highest quality location we have ever stayed at. We HIGHLY recommend staying at Pearson’s Pond!! It was a week we will always remember, and we are already planning on our next trip back to stay with the Pearson’s Pond family.

    We've stayed at numerous B & B establishments, but Pearson's Pond is the best yet. Since we left our room very early several mornings, we didn't always get to share the delicious breakfasts prepared by Rachel & Rick, but there was plenty of delicious & healthy food in the pantry - to take as desired. Going hungry would be impossible as the kitchen was well-stocked. If you can't be home in your own bed, then bed in our room was the next best thing - we slept amazing well in our cozy suite. Loved the hot tub(s) - stratigically placed in a picture postcard setting - a great way to end a long day of being a tourist. Rachel & Rick were the ultimate hosts and went beyond any expectations/requests we had. This B & B experience made this a vacation to remember - keep Pearson's Pond in mind if Juneau is your romantic destination!

    We made the unusual trip to Alaska in the winter. We greatly enjoyed our stay at Pearson's Pond. Very pretty area, beautiful inn, beautiful rooms with lots of nice touches.
