Jo is a pastry chef who enjoys making in-season fresh fruit tarts. In summer Alaskan blueberries are used which are densely sweet and almost wine like in richness. Apple, peach, and mix fruit tarts are also made. All pastry is homemade in Jo's kitchen. Sugarless Tarts can be made by special order for guests on restricted diets. Jo's cookbook will be available in 2008.
