Smoked Salmon Quesadilla
The meal begins with an array of fresh juices and coffee, and seasonal fruit specially selected for quality and freshness. The Smoked Salmon Quesadilla, a wonderful compilation of layered ingredients originally created by Marilyn's sister Karen for her Lake Creek Lodge, begins with a fresh tortilla crafted by the Anchorage based Taco-Loco company. Locally smoked Bristol Bay red salmon is stacked on, followed by four different cheeses, tomatillo sauce, cilantro and green onions, and a lovely smear of sour cream. These layers of goodness are topped off with a tortilla lid and the quesadilla is lightly grilled and served fresh, hot and melty. Rosemary Breakfast Potatoes or some other perfect complement is served alongside. It all adds up to a great way to start the day. Mmmmmmmm.
