Genavieve's Buttermilk Pancakes

Ingredients

  • 1/2 cup Flour
  • 1/2 cup Brown Rice Flour
  • 1 teaspoon Baking Powder
  • 1/4 teaspoon Baking Soda
  • 1/4 teaspoon Salt
  • 2 tablespoons Sugar
  • 1 Egg, slightly beaten
  • 1 cup Buttermilk
  • 3 tablespoons Melted Butter

  1. Mix dry ingredients and heat your griddle to med-low or med.
  2. Add slightly beaten egg, buttermilk and melted butter.
  3. Do not overmix.
  4. Let sit for at least 5 minutes
  5. Cook until golden brown. If the griddle is too hot, the pancake will cook to fast on the outside. Your patience will reward you with a mouth-watering golden pancake.
