Shannon's Salad: Salad

Prep time:20 minutes

Ingredients:

  • 8 cups Romain Lettuce

  • 1 Granny Smith Apple, chopped

  • 1 Pear, chopped

  • 3/4 cup Craisins

  • 3/4 cup Cashews

  • 1 cup Swiss Cheese, Shredded

  • 1/2 cup Sugar

  • 1/3 cup Apple Cider Vinegar

  • 2 tablespoons Lemon Juice

  • 2 tablespoons Onion, grated

  • 1/2 teaspoon Salt

  • 2/3 cup Vegetable Oil

Step 1:

Toss together first 6 ingredients

Step 2:

Make dressing with next 5 ingredients, blended well, then add oil and poppy seeds.

Step 3:

Pour dressing over salad and toss lightly.
