Morning Glory Muffins: Bread

Ingredients:

  • 4 cups Flour

  • 2 1/2 cups Sugar

  • 4 teaspoon baking soda

  • 4 teaspoon Cinnamon

  • pinch of salt

  • 4 cups grated carrots

  • 1 cup raisins

  • 1 cup shredded coconut

  • 2 apples, peeled and grated

  • 6 eggs

  • 4 teaspoon vanilla

  • 2 cup vegetable oil

Step 1:

Mix together flour, sugar, baking soda,cinnamon & salt. Stir in carrots,raisins,coconut & apples. In a separate bowl, beat eggs w/ oil & vanilla. Add to flour mixture & combine well. Spoon batter into greased muffin tin & bake in a preheated 350* oven for 35 min. Makes 12 large or 18 small. I imagine you can use almost any vegetable-squashes,beets?,
