Pumpkin Muffins

Ingredients

  • 2 1/2 cups Pumpkin Puree
  • 4 eggs
  • 1 cup oil
  • 1 cup water
  • 4 cups flour
  • 2 3/4 cups sugar
  • 1 3/4 teaspoons Baking Soda
  • 1/2 teaspoon Baking Powder
  • 1 tablespoon ground cinnamon
  • 1 tablespoon ground nutmeg
  • 1 teaspoon ground cloves
  • 1 teaspoon salt
  • 1 1/4 cups raisins
  • 3/4 cup chopped walnuts

  1. In a large mixing bowl, mix pumpkin, eggs, oil and water. In a separate mixing bowl, sift flour, sugar, baking soda, baking powder, cinnamon, nutmeg, cloves and salt. Stir into pumpkin mixture. Add raisins and nuts. Line muffin tin cups with paper liners and fill each almost to the top.....bake at 375 for 15 minutes.
