Blueberry French Toast Surprise

  1. Prepare 9x13 baking dish with cooking spray. Tear French bread into chunks. Place half in bottom of dish.
  2. Sprinkle on 1 cup frozen or fresh blueberries, 1/2 to 1 cup whole cranberries. Cube 8 oz. cream cheese and sprinkle over bread and berries. Top with remaining bread cubes.
  3. Whisk 8 large eggs, 1 cup milk, 1/2 cup maple syrup. Pour over bread mixture. Cover with foil and refrigerate overnight. Bake covered at 350 for 1/2 hour; uncovered for last 1/2 hour.
  4. Combine 1 cup sugar (refined or brown), 2 Tbs. corn starch. Add 1 cup water and cook until thickened. Add 1/2 cup blueberries. Serve over warm French toast, with breakfast patty, and fresh fruit. Enjoy!
