Green Apple Omelet

  • 1 Granny Smith apples
  • Bleu or Gorganzola cheese
  • 4 Eggs

  1. Peel and slice apple. Saute in butter til soft and slightly browned.
  2. Melt 1/2 tsp butter in two small omelet pans.
  3. Whisk 2 eggs for each pan; add to pans.
  4. After eggs set, add apples and crumbled cheese to 1/2 the egg mixture. Fold other 1/2 over, omelet style, and finish cooking. Serve immediately with a sprinkle of nutmeg.
