Pea Soup

Ingredients

  • 2 cups Peas, fresh or frozen
  • 1 Potato
  • 1 Celery, diced
  • 1 Carrot, diced
  • onion, diced

  1. Boil/bake potato and cut into pieces. Put peas in blender with 1-1/2 C. BOILING water. Liquify. Add potato. carrot, celery. Blend to desired thickness. Add water, if needed.
  2. Pan fry onion in butter. Add to soup. Season to taste.
  3. Add diced ham. Serve with croutons.
