3 tbl Philadelphia Italian herb cooking cream cheese
1 cup fresh spinach
1/8 cup chopped onions
6 cherry tomatoes
1/8 cup fresh chopped mushrooms
1/4 tsp salt
Preheat oven to 350 degrees.
Saute onions, mushrooms & spinach (except for 12 leaves).
While being sauteed, blend eggs, cream cheese & salt.
Spray muffin tin with cooking spray and line 6 with 2 spinach leaves. Pour in 1/2 of egg mixture, add sauteed veggies and then the remaining egg mixture.
Bake 350 degrees for 15 minutes (5 minutes before done, add cherry tomato to top of each one). Makes 6 servings, 2 "muffins" each.
You can adjust recipe by adding seasoned crumbled sausage or even chopped ham.
