Italian herbed muffin-sized quiches

Ingredients

  • 4 eggs
  • 3 tbl Philadelphia Italian herb cooking cream cheese
  • 1 cup fresh spinach
  • 1/8 cup chopped onions
  • 6 cherry tomatoes
  • 1/8 cup fresh chopped mushrooms
  • 1/4 tsp salt

  1. Preheat oven to 350 degrees.
  2. Saute onions, mushrooms & spinach (except for 12 leaves). While being sauteed, blend eggs, cream cheese & salt.
  3. Spray muffin tin with cooking spray and line 6 with 2 spinach leaves. Pour in 1/2 of egg mixture, add sauteed veggies and then the remaining egg mixture.
  4. Bake 350 degrees for 15 minutes (5 minutes before done, add cherry tomato to top of each one). Makes 6 servings, 2 "muffins" each. You can adjust recipe by adding seasoned crumbled sausage or even chopped ham.
