Farmers Breakfast Casserole: Main Dish

Ingredients:

  • 3 cups Hash Browns

  • 1 cup Diced Ham

  • 1 cup Cheddar Cheese

  • 1/2 cup Green pepper

  • 1/2 cup Mushrooms

  • 1/2 cup Green onion

  • 1 12 oz can Evaporated Milk

  • 4 Eggs

  • 1 teaspoon Salt & Pepper

  • 1/2 cup Cheddar Cheese

Step 1:

Spray 9x13 casserole dish with no stick spray. Spread hash browns evenly on bottom of dish, sprinkle with diced ham, 1 cup of cheddar cheese, chopped vegetables. Set aside.

Step 2:

Mix 4 eggs and one 12 oz can, salt & pepper. Pour over ingredients in casserole dish. Set in refrigerator over night.

Step 3:

Bake at 375 degrees the next day for approximately 45 minutes. Remove from oven, spread the 1/2 cup of cheddar cheese over top. Let this set for approximately 10 minutes before serving. This allows cheese to melt and casserole to set up and cool prior to serving.

Step 4:

This is a guest favorite and a wonderful dish to serve when you have a large croud. We garnish with sliced cherry tomatoes and parsley. Often served with fried apples, biscuits coffee & juice.
