Blueberry Bread

Ingredients

  • 1/3 cup flour
  • 4 tablespoons salt-free butter
  • 1/2 lemon grated lemon zest
  • 1/2 cup granulated sugar
  • 1 teaspoon cinnamon
  • 3/4 cup granulated sugar
  • 1/2 cup buttermilk
  • 4 tablespoons unsalted butter
  • 1 egg
  • 2 cups flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 2 cups fresh blueberries
  • 1/2 lemon lemon zest

  1. Topping Mix together with your fingers the first 5 ingredients and set aside. This should be crumbly.
  2. Bread: Cream together sugar and butter. Add the egg and mix. Add the buttermilk and mix.
  3. combine dry ingredients and mix in to better mixture.
  4. Stir in blueberries and lemon zest.
  5. Spread into 9X5 inch bread pan sprayed with non-stick spray. Top with topping mix. Bake at 375 for one hour until knife comes out clean.
