Pumpkin Bread: Bread

Ingredients:

  • 7.5 oz White Sugar

  • 7.5 oz Light Brown Sugar

  • 4 oz Olive Oil

  • 2 Whole Eggs

  • 1 Egg Yolk

  • 13 oz Canned Pumpkin

  • 2 1/2 cups All Purpose Flour

  • 1 1/2 teaspoon Baking Soda

  • 1 teaspoon Ground Cinnamon

  • 1/2 teaspoon Salt

  • 3/4 teaspoon Ground Ginger

  • 3/4 teaspoon Ground Cloves

  • 1/2 teaspoon Ground Nutmeg

  • 1/4 teaspoon Ground Black Pepper

  • 3 oz Water

Step 1:

Place eggs and oil in blender; blend until emulsion forms. Add white and brown sugar; blend until fully incorporated (about 3 minutes). Add pumpkin puree; blend until fully incorporated (about 3 minutes).

Step 2:

Mix together flour, salt, cinnamon, cloves, ginger, pepper, nutmeg, and baking soda. Sift all ingredients together. Add 1/3 of the water; add 1/3 of the flour mixture. Repeat until all are completely mixed together

Step 3:

Spray loaf pan with pan spray, then dust with flour. Place batter in pan.

Step 4:

Cook in 325° oven for 30 minutes. Check and rotate pan. Continue cooking for another 30 minutes; check and rotate.

Step 5:

The bread is done when it appears to be light brown in color and you can insert a toothpick to the center and it comes out clean. Remove from pan immediately, and place on cooling rack.
