Pumpkin Risotto with Maltese Sausage: Main Dish

Ingredients:

  • 2 tbs. olive oil

  • 2 Medium Onions

  • 2 cloves garlic, finely chopped

  • 1 red chili pepper seeded and finely chopped

  • 1/2 glass white wine

  • 2 tbs. chopped parsley

  • 400 grams Maltese Sausage

  • 400 grams diced Pumpkin

  • 2 tbs. grated Pecorino Cheese

  • 2 Cups Rice

  • 3 1/2 Cups Hot Water

Step 1:

Peel skin off the Sausage and chop up meat coarsely

Step 2:

Place oil in a pot, add the onions and sauté till soft. Add the garlic and chili and sauté for 2 minutes.

Step 3:

Turn the flame up, add the wine and sauté for 2 minutes whilst stirring. Add the pumpkin and parsley, mix and cover pot. Sauté over a medium flame for 8 minutes. Stir occasionally.

Step 4:

Add the sausage and the rice, mix, cover pot and simmer for 18 minutes. Stir occasionally.

Step 5:

Bring off the fire, mix in 2 tablespoons cheese and leave to stand for 2 minutes. Serve with the Pecorino cheese.
