Dice pre-cooked chicken apple sausage and saute on medium high heat to brown. Set aside.
In a large non-stick saute pan, add thinly sliced fingerling potatoes and 1/2 cup water. Cover and cook on medium high heat to steam until water is gone, about 10 minutes. Uncover and add chicken sausage, chopped red bell pepper, chopped sweet onion, and corn. Add salt and pepper to taste.
Continue cooking on medium high heat, stirring occasionally until peppers and onions are soft and potatoes have a nice golden brown finish and are fork-tender, about 5-8 minutes.
Plate and sprinkle with crushed bacon, chives, and halved grape tomatoes.
(Optional) Top with a sunny side up egg or two to make a complete meal.
