Breakfast Souffle: Breakfast-Brunch

Servings: 1

Ingredients:

  • 2 tablespoons butter, no substitute

  • 1 egg

  • 1/4 cup milk

  • 1/4 teaspoon vanilla

  • 1/4 cup flour

  • Honey

  • Sliced fresh fruit and/or berries

Step 1:

Preheat oven to 425 degrees. Spray a 16-ounce round baking dish with Pam, place butter in dish & place in oven until butter melts. Watch carefully - do not let butter burn. Meanwhile, beat egg for 30 seconds. Add milk & vanilla & beat 30 seconds more. Stir in flour until mixed, do not over beat. Remove dish with melted butter from oven, immediately pour batter into the dish with the hot melted butter, then immediately return to the oven. Bake for 15 to 20 minutes. Batter will puff up around the edges and center will set. Meanwhile, drizzle the serving plate with honey. When souffle is done, remove from baking dish & place on top of the honey. Fill center of souffle with sliced fresh fruit and/or berries. Combinations such as peaches and blueberries or banana and strawberries make a delicious choice. Serves 1, but recipe may be multiplied by the number of persons being served.
