Apple Pecan Pancake: Breakfast-Brunch

Ingredients:

  • 2 Eggs

  • 3 tablespoons Butter, melted

  • 1 1/8 cups Milk

  • 1 3/4 cup Flour

  • 2 tablespoons Baking Powder

  • 3/4 teaspoon Salt

  • 1 teaspoon Cinnamon

  • 1 cup Granny Smith Apple, peeled and grated with juice

  • Juice of one fresh lemon

  • 3/4 cup Pecans, chopped and toasted

Step 1:

Toast pecans. Combine flour, sugar, baking powder, salt, and cinnamon in medium mixing bowl.

Step 2:

In separate mixing bowl beat eggs slightly. Add milk, melted butter, lemon juice, and grated apple. Mix well.

Step 3:

Add apple mixture to flour mixture and blend until moistened. Do not overmix. Fold in chopped, toasted pecans.

Step 4:

Use shy of 1/3 C measure per pancake and cook on griddle at 325 degrees.
