Oatmeal Pancakes: Breakfast-Brunch

Ingredients:

Step 1:

Use a large bowl. Add 1 & 1/2 c. flour, 1 & 1/2 c. quick oatmeal, 2 eggs, 1/2 tsp. vanilla, and 2 cups milk. Stir with a fork and let stand 15 minutes.

Step 2:

Heat griddle on medium. When hot add mixure in four equal parts. Flip when top bubbles. Cook about 1 minute on this side. Repeat with remaining ing.

Step 3:

Heat 1/2 pecans with 1 tsp. butter, 1/2 tsp. cinamon and 1/2 tsp. sugar in 300 degree oven for two minutes. Add powdered sugar to tops of pancakes as well as sugar/ cinamon toasted pecans. Enjoy!
