Melt butter and add flour to make paste. Add milk and heavy cream and beat until thickens. Do not let it boil. Remove from heat, cover and refrigerate
Slice, toast and lightly butter english muffins. Quarter and place in 13x9 greased pan.
Whip eggs, add nutmeg and lightly scramble in pan. Do not cook eggs all the way. Have them slightly runny. salt and pepper to your taste. Pour eggs over english muffins. sprinkle crumbled crisp bacon over eggs. Top with 1/2 of the white sauce then have of the shredded cheese, repeat with white sauce and cheese.
You can place in refrigerator overnight or bak right away.
Bake 350 degrees for 30 minutes. Top with chopped green onion before serving.
