Garden & Galley"s signature Muffin-buttermilk/rhubarb

Ingredients

  • 1&1/2 C. brown sugar
  • 2/3 C. salad oil
  • 1 egg, beaten
  • 1 C. buttermilk
  • 1 t. salt
  • 1 t. vanilla
  • 2&1/2 C. flour
  • 1&1/2 C. diced rhubarb
  • optional-1/2 C. chopped nuts
  • topping- 1/4 C. sugar and 1 T. cinnamon

  1. Stir ingrediants together in order given. Fill greased muffin tins 2/3 full. sprinkle with topping mixture. Bake in 350 degree pre-heated oven for 15-20 minutes. Makes 12 muffins.
