Banana Nut Bread

Ingredients

  • 1/2 cup oil (canola or vegetable)
  • 1 cup sugar
  • 2 eggs
  • 3/4 - 1 cup ripe mashed bananas
  • 1 1/4 cups flour
  • 3/4 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup chopped walnuts (optional)
  • 1/2 teaspoon cinnamon (optional)
  • 1/4-1/2 cup chocolate chips (optional)

  1. Cream oil & sugar until fluffy with mixer. Add eggs, beating well after each. Add bananas.
  2. Add dry ingredients and mix well.
  3. Using a spatula or bowl scraper, add nuts and chocolate chips and mix by hand.
  4. Pour into 2 greased bread pans (or about 4 mini-loaf pans). Bake at 350 degrees for about 45 min. Top should be springy, but not spongy. Eat plain, or with butter, and add a fruit plate if desired. Enjoy
