A Mellow Mushroom: Breakfast-Brunch

Ingredients:

  • 1 Large Portabella Mushroom cap

  • 1 poached egg - large

  • 6 Baby spinach leaves

  • 1 tablespoon Olive oil

  • 2 tablespoons Hollandaise sauce

Step 1:

Scrape out gills and stem from mushroom Brown in olive oil and then drain on paper towel

Step 2:

Cover inside of mushroom with spinach leaves

Step 3:

Poach egg and then put into mushroom cap Put a dollop of hollandaise on top

Step 4:

Serve with sliced cherry tomatoes and asparagus tips and Jimmy Dean sausage For color, I added some cheddar cheese squares Serve immediately
