Lemon Chiffon Pancakes

Ingredients

  • 3 Eggs
  • 2 tablespoons Vegetable Oil
  • 2 teaspoons Salt
  • 1 cup Cottage Cheese
  • 1 tablespoon Maple Syrup
  • 2 tablespoons Lemon Zest
  • 2 tablespoons Lemon Juice
  • 1/2 cup Flour

  1. Beat egg whites until stiff in an electric mixer bowl. Set aside.
  2. In a food processor or electric mixer, combine yolks and rest of ingredients. Process until smooth and fluffy. Pour into mixing bowl. Fold in egg whites.
  3. Cook on a griddle at 350 degrees F. Serve immediately with maple syrup.
