Baked Nectarines with Pistachios & Cardamom: Breakfast-Brunch

Ingredients:

  • 8 tablespoon pistachio nuts

  • 4 tablespoon unsalted butter

  • 1/3 cup powdered sugar

  • 1/8 teaspoon cardamom

  • 1/8 teaspoon salt

  • 4 nectarines

  • 1 teaspoon lemon juice

  • 1/2 cup vanilla yogurt

Step 1:

Preheat oven to 400 degrees. Chop pistachios in a food processor until finely ground. Add butter, powdered sugar, cardamom and salt. Process until combined.

Step 2:

Place nectarines, cut side up, on a baking sheet, and sprinkle with lemon juice. Place a generous tablespoon of pistachio mixture on each nectarine half.

Step 3:

Bake until fruit is tender and topping is crisp, 10 to 15 minutes. Let cool for 5 minutes. Transfer to serving bowl and top with tablespoon of vanilla yogurt.
