Vegetable Kugel

Ingredients

  • 1 cup grated raw apple
  • 1 cup grated raw sweet potato
  • 1 cup grated raw carrot
  • 1 cup matzah meal
  • 1/2 cup margarine melted
  • 1 teaspoon salt
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1 teaspoon nutmeg

  1. Preheat oven to 325. Grease a 10 inch casserole or muffin tins.
  2. Mix all ingredients togather well.
  3. Pour into baking dish. Cover with aluminum foil and bake 45 min. If using muffin tins, bake 30 minutes
  4. Raise oven to 350, remove cover, and bake an additional 15 minutes. Serve warm
