Baked Eggs Mexicana

Ingredients

  • 3/4 cup Pork Chorizo
  • 1 dozen Eggs
  • 1/2 cup Mild Green Salsa
  • 1 cup Shredded Jack Cheese
  • Salt & Pepper
  • 1 Ripe Avocado
  • 1/4 cup Sour cream
  • 2 cups Prepared pinto or black beans
  • 1 dozen Tortillas

  1. Preheat oven to 350. Spray 6 shallow ramikins with Pam. Saute chorizo in a small pan until lightly browned. Divide cooked chorizo evenly among the 6 ramikins. Crack two eggs over the chorizo, sprinkle with salt and pepper. Spoon about 1-2 Tblsp. of mild green salsa over the eggs, and top with a little grated jack cheese.
  2. Bake at 350 degrees for about 15 minutes or until whites of the eggs are cooked through. To serve, top with thin slices of avocado and a dollop of sour cream. Serve with pinto beans or black beans and hot tortillas.
